This is a wonderful recipe for Healthy, Old Fashioned Pancakes. There is nothing fancy here… just good taste!!
1 & 1/2 cups organic whole grain flour (I used a lovely sprouted whole grain spelt flour)
3 & 1/2 teaspoons organic, aluminum-free baking soda
1 teaspoon sea salt
1 & 1/2 tablespoons organic, raw coconut sugar
1 & 1/4 organic, pasture-raised & finished milk (I used 1/2 cup organic whole cream & 3/4 cup water)
3 tablespoons raw, organic, pasture-raised & finished butter – melted (I used 1 tablespoon butter & 2 tablespoons raw, organic, extra-virgin coconut oil)
1/2 cup of warm, organic blueberries
2 T. of organic, grade b maple syrup
In a large bowl, sift together the flour, baking powder, salt & sugar (Often substituting whole grain flour can make a recipe very dense, so I sifted the ingredients 4x & the pancakes came out exquisitely light & fluffy)
Make a well in the center & pour in the milk, egg & melted butter. Mix until smooth.
Heat a lightly oiled griddle (I used the coconut oil), over medium high heat. Pour aprox. 1/4 cup of the batter into the pan for each pancake. Brown on both sides & serve warm.
Serve with the blueberries & maple syrup.
